Barrel Tasting Notes from the 2007 Vintage, taking by Galo and Jon on 12/29/2007:
Kelsey's Edition:
- barrel 4 - vanilla nose, black pepper, smokey, field grass, cinnamon
- barrel 5 - minerals, graphite, strawberry
- barrel 6 - mid-berry, slight butterscotch, slight black pepper. +
- barrel 10 - softest so far, berry, raisin, allspice. well integrated. ++
- barrel 11 - light berries such as strawberry or cherry, white pepper, green melon, slight butter
- barrel 12 - butter, lemon peel
- barrel 13 - strong berry nose, good color, tannic, spicy. ++
- barrel 14 - great nose, slightly buttery, dark. +
- barrel 16 - lemon peel, berries, vanilla, pie cherry, bitter
- barrel 18 - blackberry, currant, grass, butter, earthy, oats. ++
Sophie's Edition:
- barrel 1 - smells nice. bitter lemon palet.
- barrel 2 - green, lemon
- barrel 3 - fruity, tart, slight reduction gone a moment of air, "green berries"
- barrel 7 - tangy, licorice
- barrel 8 - dill, bell pepper, fairly astringent, slight butter, light color
- barrel 9 - lemon and cinnamon, bitter, maybe ML still in progress.
This is early in the game for barrel tasting. We know we have some lemon peel flavors to eliminate while at the same time improving the pH which is reading too high to stabilize without large amounts of SO2. Will be an interesting challenge and we'll have more notes in the spring. Maybe some adds here once Matt gets a chance to go through them.

Tacie/Adrian, I haven't forgotten. I will update this with Adrian's notes as soon we get a chance to get you over there. I think 2 months of further rest will do the wine good before the real critical gets in there though. :) -Jon-
