Our 2009 Kelsey’s Confection started with the luscious ripe fruit from our estate Pinot Noir. We fermented it like usual until half the natural sugar was consumed, and then added grape spirits to increase the alcohol, causing the fermentation to stop. After more than 2 years in the barrel, it integrated and softened into the delicious aperitif it is today.
